Ramps: Also known as wild leeks, these foraged items can be found on the forest floor around April and May. Use them as you would onion or garlic; the taste is somewhere in between.
Japanese Asparagus: This hollow asparagus is wonderfully crunchy, as if it were crossed with Bamboo shoots.
Dryad Saddle: Don't miss the opportunity to use this wild polypore mushroom with a taste similar to watermelon rinds.
Pokeberry shoots: The early springtime shoots are just ripening with an earthy green flavor.
Mizuna: Cultivated, bitter lettuce with a great texture and sharp taste. |
